Finally I found a combination that seems to work and make some nice fluffy pancakes and the good news is they are protein packed, made with three sources of protein.
What you need:
- I scoop vanilla protein (I used optimum nutrition)
- 1/2 cup oats
- 1/4 cup 0% greek yogurt
- 3 TBS egg whites
- 1 TBS almond milk
- 1 tsp baking powder
- 1 cap full vanilla extract
- Cinnamon to taste
- Banana (optional)
- Blend oats in blender to create oat flour
- Combine all other ingredients and combine with hand mixer
- Pour 1/4 cup per pancake onto hot skillet
- We like to slice up bananas and cook them directly into the pancake it caramelizes them and makes them super yummy
- Enjoy!
