One Year in Texas

As of this past Saturday I have officially lived in Dallas for 1 year! Wow first I just have to say this year went by so fast I can hardly believe it, it really does feel like just yesterday that I was packing up and leaving New Mexico. So much has happened this year so I think now is a great time to look back on everything:

I moved here to Dallas in the heat of the summer, the day I got here it was 105 degrees and humid as ever and I couldn't help thinking what did I get myself into with this heat. Little did I know that heat would last well into October before it started to cool down and the humidity was killer. Everyone here makes fun of me for thinking its humid but coming from less than 10% humidity to over 50% is a big difference for me and I definitely feel it. Throughout that summer I finished up the last of my graduate school classes and started on the job search. I officially landed my first full time "big girl job" at the end of the summer as a marketing coordinator and started in the working world.

 

Since then we moved into a new apartment and explored the city that is our new home. There are times when it is a tough adjustment for me to live here in such a big city but it is a great change from small town life. I am constantly stumbling upon new and great things and places within the metroplex, it really has a lot to offer.

In addition to working and exploring I joined the local Delta Gamma Alumni group where I have met some great people. This is something I want to continue on in the future and get more involved in. It is such a great opportunity to meet new people and stay involved in the sorority that was such a huge part of my life in college.

So many other wonderful things have happened within the last year as well such as becoming a second time Aunt, getting engaged to the man of my dreams, celebrating weddings and kids with some of my closest friends and so much more. I cant wait to see where the next year takes me here in Texas, I know this will be a year to remember as we plan our wedding and am very excited for what's to come.

Our Wedding Venue

I was hoping to have this post up yesterday but I had to wait for the thumbs up letting us know that our reservation was official. At the end of our venue tours it was very clear to Evan and I which venue was number one in our minds. Surprisingly it was not the one we went in thinking it would be. The first time I saw pictures of our venue online I fell in love but logistically thought it might not be our best option, however in the end its pros greatly outweighed its cons. So which venue did we pick?


Paa Ko Ridge Golf Club
 
Paa Ko Ridge is located up in the mountains about 20 minutes outside of Albuquerque which is what gives it the most beautiful views. The whole place is breathtaking, mountains, trees, pristine greens, ponds and more.
 
The ceremony will take place on the green of one of the courses on the property. After seeing the ceremony spot that took us in the see the indoor reception space, at this point I was completely sold. I felt like most of the other places excelled in either having a great ceremony spot OR a great reception spot and Paa Ko had great options for both.

 
 
Of course the reception space was empty because they didn't have any events going on that weekend but I've seen beautiful pictures of ones from the past. I loved this space because it needs so little, its already beautiful in a simple and clean way. In comparison our second choice option would have required a large amount of draping and more to fit what we were looking for.
 
I am so thrilled that our decision is made and our date it on the books this takes a huge weight off my shoulders now we can officially begin planning and relax a little. Since the wedding is over a year away we wont have to get into little details quite yet the next thing we will need to do will be to pick a photographer, which will be a really tough one for us.
 
I can't wait to marry the man of my dreams in this spot!!

Summer Quinoa Salads

Lately I have been very into the quinoa salads that Whole Foods offers on their hot bar, so much so that I would want to get dinner from there on the regular almost solely for the quinoa. Well I finally decided I should figure out how to make something similar at home. I started by browsing Pinterest for ideas and came across many variations. In the last couple weeks I have made two entirely different versions, so here they are:
 
Vegetable Quinoa Salad


Ingredients:
  • One cup quinoa
  • 1 cup vegetable stock
  • 1/2 red bell pepper diced
  • 1/2 orange bell pepper diced
  • 1 large carrot diced
  • Cherry tomatoes quartered
  • Spinach
  • 1 lemon juiced
  • 1 lime juiced
  • Honey
  • Olive Oil

1. Prepare quinoa in 1 cup vegetable stock and 1 cup water
2. Once the quinoa is done cooking throw in a couple handfuls of spinach and stir in so they become "wilted"
3. Then toss in all diced vegetables
4. Drizzle with a little honey and olive oil
5. Top with lemon and lime juice to taste, I threw both in my juicer and drizzled on the mixture until it had the fresh flavor I was looking for (I think about 2-3 tablespoons)
6. Serve chilled and enjoy


Whole Foods Inspired California Quinoa Salad

I found this recipe and knew I had to try it since this is one of my favorites that whole foods offers. I did change it up just a little due to taste preference by doing the following:
  • Cooking the quinoa the same as above with 1 cup vegetable stock and 1 cup water
  • Eliminating the onion since raw onions are not liked in our household
  • (accidently) eliminating the raisins, but next time I wouldn't mind adding them in
  • Using the lemon and lime juiced again and no zest
If I made this again I would probably change it a bit, maybe even go closer to the original recipe but it still tasted great and was a perfect summer side dish.

Back from our Busy Weekend

Well we are back from our visit to New Mexico and I am exhausted! We did so much in such a short time I feel like there wasn't a moment to breath, but ultimately it was a great and exciting trip so no complaints (I do however wish I could sleep for about the next 20 hours) with all the craziness I took almost no pictures so apologies for a more word filled post today!

Friday and Saturday we had appointments took look at five possible wedding venues and I was happy we walked away with several good options. However as you can guess one place in particular stood out for us as "the" spot, were hoping to hammer out the contracts today and then I will share what we choose on Wednesday. We have also narrowed it down to two dates that we are trying to choose from, I know once the date and venue are official I will feel a huge weight lifted and will be able to relax on the wedding planning for awhile.

Aside from all the venue tours, which took up the majority of our time we spent time with friends and family. Enjoying dinner at a popular Mexican restaurant with friends, a family dinner with my moms side (including the worlds best French dip sandwiches, thanks grandma) and a fathers day bbq on Sunday. Every time I visit home now that I live in a different state I think there is just too much to accomplish to only come home for a couple days this trip was no exception. I also left hoping I will be able to get back at least one more time before Christmas, fingers crossed.

What I'm Loving Friday

Well my weekend came a day early this week when I headed out to New Mexico after work last night. I have so been looking forward to this trip for so many reasons: a long weekend, get to see my friends and family, picking a wedding venue and a date!!! So there is plenty for me to be loving this week:

Having an Overall Good Week
 
I wouldn't say this week was by any means perfect... but seriously how many are? However I would say that it was much better than many I have had recently. I got some good news, had a short week at work, spent the week excited for this weekend and didn't have a work week that made me want to punch people lol (not that I usually do or anything...) 

Summer Sangria Recipes
 
Now I tried my hardest to take a decent picture of this yummy concoction and this was the best I got so sorry bout that! I love that this was a nice refreshing beverage perfect for the hot summer months. I will share the official recipe some time next week

Winning a Wedding Giveaway
 
I entered a drawing with the Albuquerque Perfect Wedding Guide for 12 months of wedding giveaways and it just so happens I am June's winner and I am soooo excited!!! I got to choose from a list of available prizes and went with some free candelabra centerpieces which I am thrilled about because I don't think those would have otherwise been in the budget

And its about damn time for me, a huge weight will be lifted off my shoulders once we have an official date and a booked location so I at least know its on the books. Hopefully next Wednesday I will be sharing our pick with you all! Fingers crossed :)

What I'm Loving this Friday

Well its finally Friday once again and I couldn't be more thrilled! Honestly I have close to zero plans for this weekend so far but I'm sure it will be great anyway and we'll find something's to do! Now onto the main event, I know it has been awhile but here is what I am loving this week:

Wedding Crafting Nights

I started a very special wedding related craft project and spent some time working on it almost every day this week. For some people this project would probably be to much but I am loving it, any good excuse to get my craft on I am there! (Why cant I find a way to make this my job?) This also so much more fun because its a gift for others and I hope they will love it :) I will do a full post on the final product once they are complete and sent out, I wouldn't want to ruin the surprise.

Friday Night Lights Netflix Marathon
 
I originally started this show last year and got about half way through the second season before I stopped watching for one reason or the other. I honestly think the only reason I stopped was because I moved to Dallas and had a lot going on. Well we decided to pick it back up again and have quickly gotten through the rest of season 2, 3, 4 and are already on season 5 which is the last season. I can not stop watching at this point I have to know what will happen next and I am honestly kinda sad knowing there are only a few episodes more before we reach the end. Ultimately though I think I just want to be Tami Taylor ya'll!!!

p.s. did you know there is a blog dedicated entirely to her hair... I mean it is gorgeous
 
New Mexico Bound in 1 Week!!
 
Yes Evan and I will be heading to New Mexico next Thursday to look at wedding venues and we can not wait! We are so excited to have a little weekend getaway, have some Mexican food, see our friends, my family and finally settle on our official wedding date. I know it will be a jam packed trip without a doubt but I am still excited and know it will be a lot of fun. We have appointments to see 5 venues within two days and lots of other plans to look forward to.

I don't know that everyone will think this is funny but I sure did. If you were in Greek Life you know that sorority bid day is a big deal for girls and full of fun, excitement, screaming, yelling, dancing, running, photos and signage. Well that's pretty much what is happening in the video... however the affect of parts being in slow motion oh and the fact that they were guys just makes in comical.

Wedding Wednesday- Narrowing Down Venues

Ok well I originally posted this list I think a little too soon, and like I said things could change, and they already have, after finding out a couple of our choices have weird guidelines about reservations, including not allowing them until exactly 12 months before your desired date (aka call on that date the year prior and hope your were the first one... I don't think so) we have changed a couple, nothing major most of our venue tours still stand and will accept reservations if we are ready! So here is our updated list, we have also really looked into the possibility of a tent reception at a couple of these locations, which is something I have always been in love with the idea of :)

Prairie Star

I'm sure you can tell that the reason I picked this one is indeed for the view. Since were getting married in New Mexico I would love to have those Sandia Mountains as a backdrop, all I can think about with this venue is the opportunity for endless beautiful photos.
 
Pros: Reasonable price, view, close to hotels, food
Cons: Really the only con I have is the reception space, it is so plain I think I would feel the need to transform it which of course would be pricey, however a tent reception is also an option at this location which we will consider
 
Paa Ko Ridge Golf Club

Again, another gorgeous view. Every time I look at pictures of this place I just get happy because its just so beautiful, it doesn't even seem like its in New Mexico. Sorry I couldn't find a picture of the ceremony spot that I could share with you.
 
Pros: Beautiful, very limited décor needed, good package
Cons: Location it is in the mountains and not close to any hotels, a little higher cost
 
Sandia Golf Club

Well of course another mountain view. You have your ceremony on the golf course and the reception in their covered patio with an open view of the mountains. This venue is a little different, not your typical ballroom but I kinda like it.
*** We just found out that they are about to open a new event space here that would be a traditional reception ballroom with gorgeous views, we are looking forward to getting more information on this option, we have also seen pictures of some recent tent receptions here that were just gorgeous
 
Pros: View, price, location, casual vibe
Cons: Food options, they are very strange, they allow you to bring in your own caterer but charge you an additional $10/ person, if we choose this venue that would be the route I'd take
 
Hotel Albuquerque
 
 
This is a venue I have actually loved for a really long time. I have always thought their outdoor ceremony space was just gorgeous with the vines and fountains. The reason we originally didn't have it in the mix was due to cost, however after we really evaluated each cost at every place this one ended up being very similar, they just present it as one lump sum where the other venues you have to add on each cost individually.
 
Pros: Beautiful ceremony space, great reception ballroom, location convenience
Cons: Has been referred to as a "wedding factory" since they will book more than one on a given day, no view of the mountains- yeah as you can tell these aren't major cons lol   
 
I think these all have the potential to be great venues I think it will all be a matter of weighing the pros and cons for our favorites against what we want for our special day and who knows a new location could be thrown into the mix at any time.
 
Lately my favorite thing has been watching wedding videos at local venues, it really gives you a great sense of the space and how the event could go there. That's how I found most of these and fell in love with them, plus watching the videos is also just fun.

Things I Want to do at 24

Hey ya'll and Happy Monday!

I know its been awhile but I was out sick for the second half of last week and just took it really easy this past weekend. Therefore I don't really have anything interesting to share for a weekend recap so I thought I would do something a little different today. Last Thursday was indeed my birthday, I turned the big 2-4 and while I didn't do anything super exciting for my birthday based on the circumstances I am just beyond happy! I am starting a new year in my life that I just know will be one of the best yet, starting it engaged to my best friend with so many amazing things to look forward to. Knowing this I decided to make a list of all the things I want to do/accomplish this year, here it goes:

Things I want to do at 24
  1. Look for the good in every day {maybe take to writing it down}
  2. Let the people I love know how much they mean to me at every opportunity
  3. Spend quality time with my finance, not just on the couch (but that's good too)
  4. Explore more of Dallas
  5. Enjoy every part of wedding planning, even the stressful parts
  6. Visit my family in New Mexico as much as possible
  7. Travel to see my friends when I can
  8. Celebrate the happy moments in others lives with them
  9. Meet new people
  10. Get involved in more
  11. Develop my career, one step at a time
  12. Keep in contact!!
  13. Spend as much time outside as I can
  14. Exercise at least 4 times a week
  15. Eat healthy 85% of the time, but don't let it take over and keep you from life
  16. Plan special date nights for my man
  17. Send snail mail
  18. Take a class- dance, art, music, etc.
  19. Post to the blog 2-3 times a week... every week (but lets hope for more)
  20. Last but not least... ENJOY LIFE, try not to get hung up on the little things that wont matter later
